HaPpY Joyful Fall! I love this time of year and can't get enough of pumpkin in everything. Anyone else?? Tonight after my workout I was craving pumpkin, so I created a new fun pumpkin protein pancake recipe while in the kitchen. These are delicious and a tasty fat loss friendly breakfast, snack or post workout meal filled with protein, fiber and lots of yummy flavor. A must try if you love pumpkin!
Enjoy! Here are the ingredients and recipe below:
Pumpkin Protein Pancakes
~3/4 cup Egg whites
~3/4 cups Organic pumpkin
~1 scoop of Vanilla whey protein powder (I love ME craving shake)
~15 dashes of Cinnamon
~8 dashes of Pumpkin pie spice
~4 dashes of Nutmeg
Mix ingredients in a bowl for 1 minute. Place in a pan with extra virgin olive oil spray or Pam spray. Cook in a medium pan for 3-5 minutes. For a little sweetness add berries or a drizzle of organic honey on top. These are so tasty. They make about 2 pancakes.
