Paleo Breakfast Stuffed Bell Pepper Recipe

Holy moly these are phenomenal! LOL!! If you love breakfast as much as I do you're gonna love this fun paleo breakfast stuffed bell pepper recipe. They are filled with loads of veggies, protein and some bacon. You can even enjoy them for lunch or dinner. These were such a blast to create, make and enjoy. If any of the ingredients don't agree with you, pull them out and play with it a little. If bacon isn't your think, try Canadian bacon or another meat substitution or if some of the veggies aren't your favorite, throw in ones you love!

If you'd like to make them a lunch or dinner item you can swap the eggs and egg whites for lean ground turkey, beef or chicken instead. Let me know how yours turned out.

 

Ingredients:

~3 bell peppers- cut and slice in half, remove core and all seeds

~ 3 eggs, 3/4 cup of liquid egg whites (4 egg whites) scrambled (beaten) in a bowl

~ 1/2 sweet onion, diced

~1 cup sliced mushrooms, diced

~3 cups spinach

~1 handful of heirloom tomatoes, diced

~1/2 cup of celery, diced

~1/3 cup of shredded carrot

~ 4 slices of hormone free Bacon

~ Seasonings: Chili powder, Garlic powder, Salt and ground pepper

~Extra virgin olive oil cooking spray

 

Preparation:

~Preheat oven to 375 degrees

~Grab your 3 bell peppers, slice them in half, cut and clean out core

~ Grab a large coking pan, place over Medium heat, Spray cooking spray in it

~Saute onions until soft for 3-4 minutes, then add mushrooms, tomatoes, celery, carrots and seasonings, add spinach at the very end until welted

~Grab your eggs / egg whites (they should be in a bowl beaten) and fill each bell pepper 1/2 way then add your sauteed veggies to fill up the bell pepper

~Grab a baking pan, (I like to use a pyrex), spray down with olive oil spray, place bell peppers on pan and bake for 40 minutes

~Cook 4 pieces of hormone free bacon while peppers are in the oven and divide bacon evenly among them when they come out
